Coconut Thumbprint Cookies

It's almost Valentine's Day and that means it's time for me to bake some treats for my loved ones! Thumbprint cookies are one of SHU's favorites, so when I saw this recipe, I knew I had to make it. They are rich and delicious, not overly sweet, and not to mention absolutely adorable. I love the cream cheese in the cookies mixed with the strawberry jam. It creates a divine subtle cheesecake flavor. Now that I’ve tried these cookies with cream cheese, I don’t think I’ll be going back to the traditional recipe again!To take it to another level, these babies are rolled in coconut. I love the addition of coconut because it adds another level of flavor and also makes the cookies look more elegant.
